A delicious appetizer to serve your guest. Sure to satisfy even the pickiest of eaters.
Ingredients:
1 bunch flat-leaf parsley
1 package fresh basil leaves
1 clove garlic, minced
2 tablespoons pinenuts or walnuts
2 tablespoons olive or vegetable oil
2 tablespoons Parmesan cheese, grated
2 tablespoons mayonnaise
4 large tomatoes, cut in 4 slices
16 thin slices of mozzarella cheese
8 slices of cucumber, halved
8 pitted black olives, halved
parsley leaves, for garnish
Directions:
Measure 1 cup of parsley leaves and reserve some for garnish. Combine with the basil, garlic, nuts, oil, and Parmesan in a food processor or blender and blend until smooth. Blend in mayonnaise. Arrange the tomato slices on a plate. top each with the parsley-basil mixture, sliced mozzarella, cucumber and olives. Garnish with the reserved parsley leaves. Serves 8.
